Simple quick comfort food - Pesto Rosso with Pasta

If you clicked on this post, I am sure you like to spend your time efficiently in the kitchen, probably not bored at home. This recipe is giving you everything. So far, this is my favourite, when it comes to quick meals. I'm sure, there are other things to do at home that you'd rather do than cook. The ingredients for this "pesto rosso" and the pasta are always in my pantry. So whenever I feel lazy to cook, I just quickly mix the ingredients and voilà the comfort food is ready to serve.
Pesto Rosso:
400g of sun-dried tomatoes
200g of roast red pepper
20g of basil
1 garlic clove, minced
60g of pine nuts, toasted
50g of Parmesan, grated
50ml of olive oil
salt
black pepper
Coarsely chop the tomatoes and peppers and place into a pestle and mortar with the basil, garlic and pine nuts. Grind to a coarse paste. Stir in the Parmesan and olive oil and adjust the seasoning to taste. Add a splash of water if the pesto is too thick.

If you don't have all the ingredients at home - you can easily swap the ingredients. I like to take walnuts instead of pine nuts. Or leave out the red pepper and basil and fill it in with fresh tomatoes. Just play around with the ingredients until it hits your taste.
Mix the pesto with al dente cooked pasta of your preference and enjoy with some grated Parmesan cheese.
